Learn how to make Haitian empanadas with esteemed local chef, Elsy Dinvil! 

In the class, students will each make their own batches of pâte brisée and puff pastry style doughs. They'll also learn how to make a basic Haitian marinade, Haitian Pikliz, a spicy and tangy relish, and classic beef and veggie fillings. Each student will get to shape and fry or bake their own tray of empanadas to eat and take home! Students will also take the puff-pastry dough they make in the class to experiment with in their own kitchen.

Elsy has been featured in various local and national magazines including Portland Monthly, and most recently with local celebrity Chef Gregory Gourdet, owner of Kann Restaurant, in the Food and Wine Magazine. Elsy Dinvil is the owner of Creole Me Up, a successful Haitian food processing company in Portland and author of the cookbooks, Cooking with my Mother: Your Guide to Haitian Home Cooking and Spice Up Simple Dishes With A Haitian Twist. She is also the author of a novel, When A Zombie Tastes Salt.
