Chef Aurélien Crosato will guide 17 guests from Genentech through a hands-on culinary experience to learn the fundamentals of making great handmade pasta. Participants will create fresh pasta dough from scratch and learn how to make a flavorful filling.

During the first part of the class, we will focus on tortellini-shaped filled pasta with a filling of ricotta, fresh herbs, Parmesan, olive oil, and preserved lemon.

In the second part of the class, the students will enjoy these pasta with either a tomato and meat sauce or a caper and parsley beurre blanc. Served with:

  • Local green salad with smoked beets, olives, and cumin dressing

  • Roasted seasonal vegetables with preserved lemon and toasted almonds

  • A selection of paired white and red wines

Other drinks and food will be available for purchase during the class. Please, no outside food or beverages.
