Welcome to Kristin’s team!

In this class, 4 students will learn the fundamentals of making great handmade pasta. Participants will create fresh pasta dough from scratch, learn how to make a flavorful filling, shape tortellini, sample their work, and take home extra pasta to enjoy later.

We will focus on tortellini-shaped filled pasta with a filling of ricotta, fresh herbs, Parmesan, olive oil, and preserved lemon or a vegan alternative. Students will receive all recipes, enjoy sample during class, and leave with additional pasta for a meal at home.

The class is taught by Aurelien Crosato, former chef and owner of Soléna, a Michelin-recommended restaurant in Bordeaux, France.
