Gateau Pithivier with Peter Becker 12/23 Noon


In this class we will focus on the assembly and technique of the Gâteau Pithivier - one of my favorite cakes and perfect for the holidays! We will discuss the method and theory behind puff pastry and the filling for almond Pithivier, frangipane. We will practice steps in making puff pastry, making frangipane, assembling the Pithivier, and everyone will go home with their fresh baked cake. Time permitting, we may showcase other items to make with scrap puff pastry.

Peter Becker is a master baker who has worked for top bakeries such as Nuvrei and Charlie Trotter’s. He made bread and pastry for Thomas Keller’s “Bouchon Bakery” book tour in Chicago, and was awarded Baker of the Year 2013 by Chicago Tribune.
