If you ever wanted to learn how to make croissants from scratch, now is your chance. You will practice all steps in the process: laminating, shaping, proofing, and baking of traditional croissants. We will discuss methodology as well as tips and tricks to execute. This class will touch on how to add optional sweet and savory filling additions when making at home.

Peter Becker is a previous baker for Charlie Trotter’s, Nuvrei, and made bread and pastry for Thomas Keller’s “Bouchon Bakery” book tour in Chicago. He was awarded Baker of the Year 2013 by Chicago Tribune.
